Easy marinated squash June 25, 2012

If you have a garden and you planted squash you are probably swimming in them by now.  Or if you are like and are at war with squash bugs you are happy to get whatever you can. I have managed an ok harvest so far. Today I made some Easy Marinated Squash to start using it. It is good for a side or on a warm sandwich with some provolone cheese.

You will need:

3 squash (I used two zucchini and one summer squash)

1/2 cup of a vinaigrette based dressing (I used some balsamic vinaigrette that I had open)

Cut squash into equal size slices. Combined the squash and the dressing in a zip top bag or a storage container. Let sit in the fridge for at least an hour.

Preheat oven to 350 degrees Fahrenheit. Line a pan with foil (optional but make clean up simple!) and spread the squash in as thin a layers as possibly. (I need a bigger pan..sigh)

Cook in oven for 30 -45 min. Look for the squash to be cooked through and starting to get golden brown. If needed up the heat to 375 and/or cook longer.

A simple twist on this is to just use some olive oil and salt and pepper. Three things I have on had all the time!
